Chef Ron Mendoza began his culinary career in 2000, after eight years of working in retail. To pursue a career that was more rewarding, creative, and on a grander scale, he enrolled at the California School of Culinary Arts. During his studies Mendoza joined Joachim Splichal's Patina Group, starting on the hot line of Nick and Stef's Steakhouse.

Mendoza advanced to Patina Restaurant where he began rigorous pastry training under Michelle Myers. He went on to work for David Myers at Restaurant Jaan in both savory and pastry. Most recently, Mendoza worked with both David and Michelle at Sona, where his versatility combined with an incessant energy and enthusiasm helped him to create noteworthy desserts for the restaurant. Next, Mendoza took on the executive pastry chef position at Ortolan, working with acclaimed L.A. Chef Christophe Eme. In 2006 Mendoza won a Rising Stars Award and became pastry chef at Aubergine restaurant in downtown Carmel.

Mendoza looks forward to applying his talents to sweet and savory pastry creation for his new venture, Ad Astra Bread Co.

Alaina’s background has absolutely nothing to do with bread or pastry, but she’ll keep the place from burning to the ground!

Alaina is a lifelong musician and entrepreneur who met Ron while working at Aubergine in 2011. After gaining experience in customer service, human resources, and business administration in Hospitality and Real Estate, Alaina became successfully self-employed as a music teacher in 2012, holding lessons at Dennis Murphy School of Music in downtown Monterey. She has taught independently at several local elementary schools and is a rock band music clinician. Her work with children and families has been one of her greatest joys, along with the gift of being able to perform as an original artist.

Alaina is a lover of knowledge; extra classes and programs are always dotting her music schedule. Alaina is currently attending Berklee College of Music for a degree in Music Therapy, is a Certified Healing Touch Practitioner, Reiki Master, and is seeking knowledge as a Vibrational Sound Therapist, each a pursuit of joy and interest. Thanks to these lighthearted accomplishments, she went on to found Rosewater Energy Clinic in 2017, an independent energy healing practice where certified practitioners of several modalities partner to create a holistic and varied manner of therapeutic care.

Throughout all her endeavors, her greatest wish is to live in harmony along the coast with her partner, Ron. Alaina is a former longtime resident of Seaside, and looks forward to strengthening the community from the heart through her work with Ad Astra. She is excited to continue her role as an entrepreneur through the foundation of Ad Astra Bread Co., and is proud to lend her administrative and creative skills to the success of her talented partner, Ron.
